3 Candida Diet Recipes for Vegetarians

Candida Diet Recipes for VegetariansThe Candida diet, free of sugars, yeasts, and fermented foods may seem incredibly restrictive to those who eat a vegetarian diet. Fortunately, the process of curing your candidiasis overgrowth doesn’t have to be a bland experience - even for vegetarians. Here are a few delicious recipes designed to keep you feeling healthy and strong as you recover.

Quinoa with Vegetables

Quinoa is a simple dish that can be prepared relatively quickly and enhanced with vegetables that are friendly to the Candida diet. To create this dish, you’ll need to gather the following ingredients:

  • 1 cup of quinoa
  • ¼ cup of marinara sauce (sugar free)
  • 2 cloves of minced garlic
  • ½ of a diced onion
  • 2 diced carrots
  • 1 diced yellow or green pepper
  • ½ of a head of chopped white or red cabbage
  • 2 sliced yellow squash
  • 2 tablespoons of olive oil
  • Pepper (to taste)

Place the quinoa in a dry pan over a medium heat and allow it to toast. When you hear it begin to pop, or it has turned golden brown, add three cups of water and bring the pan up to a simmer. Allow the quinoa to simmer for 15 minutes. Take a second pan and heat your oil over a medium heat. Place the cabbage, carrots, onion, and garlic in the pan and sautee for 5 minutes. Add the squash and pepper to the vegetable mixture. Remove the mixture from heat.

After the quinoa has simmered for 15 minutes, add the marinara sauce and allow it to continue simmering until no liquid remains in the pan. Add the vegetables to the quinoa mixture and make sure the entire mixture is heated through before serving.

Grilled Asparagus

Grilled asparagus is another delicious option for vegetarians on the Candida diet and it’s incredibly easy to prepare. All you have to do is wash and cut the ends off of a bunch of asparagus. Wrap the asparagus, a clove of garlic, and two small chopped onions in an aluminum foil tent with either a pad of butter or a squirt of lemon juice. Place the folded tent on the grill or in the oven (350-400 degrees Fahrenheit) for about 10-15 minutes to allow the veggies to steam properly.

Balsamic Salmon

If you’re a vegetarian who still eats fish, this amazing balsamic salmon recipe will definitely spice things up in your kitchen while satisfying both your taste buds and appetite. Start by gathering the following ingredients:

  • Salmon filets (or salmon steaks)
  • Balsamic vinegar
  • Fresh or dried dill
  • Olive oil
  • Salt and Pepper

Start by seasoning your salmon by sprinkling it with as much vinegar and salt as you desire. The amount you use will be dictated by your personal tastes. Combine enough olive oil and dill (fresh or dried) to make a dill paste. Spread the mixture over your salmon, cover, and let the salmon marinate in the refrigerator for 30 minutes.

After marinating, grill your mixture on a griddle or grill for approximately 4 minutes on each side. You will know when the fish is done because it will turn an opaque color.

Vegetarians tend to give up meat for health reasons but gorge on other types of sugary junk foods - completely contradicting their healthy lifestyles and leading themselves down the path towards Candida.
